White Peony, or Bai Mu Dan, is plucked one bud and the very next two leaves. The combination creates a more concentrated and fuller brew than buds alone. Sun withered for a few hours, then again indoors, and finally a quick bake to stop the slightest of oxidization. Studies have shown that tea with minimal processing, such as white teas, retains some of the highest levels of catechins, theanine, and polyphenols. Grown in Fuding’s terroir, this tea will steep: plush, floral, fresh wet clay, with a lingering sweet aftertaste.
